Spinach & Feta Pastries

Ingredients for a recipe including shredded cheese, chopped garlic, chopped green onions, chopped fresh herbs, pine nuts, a block of crumbled cheese, two eggs in bowls, a container of roasted sesame seeds, a tube of US-Rich pure rapeseed oil, and a small lemon in a blue bowl.

Ingredients

  • 120g frozen spinach

  • 1 x small onion (half large)

  • 3 x garlic cloves

  • Mixed herbs, salt & pepper

  • 1/2 x cup water

  • 200g feta cheese crumbled

  • 50g grated mozzarella

  • 1 x egg separated (white will mix into filling, yolk to brush the pastry)

  • Sesame seeds

Instructions

Pre heat oven to 180C.

Making filling:
Fry onion and garlic for a few minutes till tender, add in spinach, herbs, salt and pepper and the water and fry until the water has evaporated. Cool down, for quickest cooling spread on a large plate and put in the freezer, should take 5 min this way. Once cooled add in the cheese and egg white and mix well.

Spread the mixed filling over the pastry sheet and roll it up, once rolled press down to flatten slightly and slice, I did these fairly thin so I made 11 and they were the perfect size and easy for my kids to hold.

Brush with egg yolk mixed with a tsp of milk, add sesame seeds and bake for 30-32 minutes. Don’t be tempted to take it out earlier, puff pastry gets golden quickly but it doesn’t mean it’s flakey all the way through, hang tight for a better bake.

Leave to cool for 5-10 min and eat warm or cool.
