Flatbreads / wraps
Whether you call them wraps, Pita, flatbread, roti or naan bread these easy little breads will become an absolute staple in your house. They take no time to prepare and great for last minute or to accompany that curry. They require only 2 main ingredients.

Ingredients
- 175 g Greek yogurt *
- ½ tsp salt
- 210 g plain flour
- ½ tsp baking powder
* If using a watery yogurt, you may need more flour while kneading. If using thick strained yogurt, add 1 tsp more yogurt if needed.
Instructions
In a bowl, mix the salt into the yogurt, then add flour and baking powder. Stir until shaggy and combined. Knead on a floured surface for 1–3 minutes, just to bring the dough together. Cover the dough and rest 15–30 min.
Roll dough into a log and divide into 4. Shape into rough balls. Flour each ball top and bottom, then roll out thinly. Add more flour if sticky.
Heat a pan on high. Do a water test: water should form beads and scatter. Wipe the pan dry. Add one flatbread, press down, and cook ~20 sec. Flip, press again. Continue flipping every 20–30 sec. Done in 3–4 min.
Keep warm flatbreads in a tea towel to stay soft.

1/2 tsp salt
210g Plain flour
1/2 tsp baking powder
*if you use a more watery yogurt it may be more sticky so just work some more flour into the dough from your surface while kneading, if you’re using a thick strained style yogurt you may need a tsp more of yogurt.
Instrustions
In a mixing bowl mix the salt into the yogurt and then add the flour and baking powder. Mix until shaggy and combined. Place on a floured surface and knead for 1-3 minutes. Just to bring the dough together. Put the dough in a bowl and cover with a tea towel for 15-30 minutes.
Roll slightly into a log shape and divide into 4. Shape into a rough ball and then roll each one out (starting with the one you shaped first) as thin as you can, flour the top and bottom of the dough ball before rolling and add more flour as rolling if it becomes sticky.
Heat your pan to a high heat, so the water test by throwing some water on the pan and the water should turn into clumps and go to the edge. Dry the water off and add your flatbread, press down all around it and count to 20, flip and press again, turning every 20-30 seconds. It will cook in 3-4 minutes. I keep mine in a tea towel while they’re warm to keep them soft.
